1 can of sardine in spring water
1tsp of finely chopped scotch bonnet pepper
pinch of salt and pepper
1 tbls coconut oil
1. Drain excess water from sardines.
2. Add all ingredients into a medium bowl, mix well.
3. Place frying pan on a medium heat, add coconut oil.
4. Using a ladle or spoon, poor approximately 2 tbls of the sardine mixture in the pan. More
than one fritter can be made at a time.
5. Flip each fritter over to complete cooking.
6. Serve warm.
